Home-Made Chinese 5 Spice Powder Seasoning Mix

Make your own Chinese Five spice powder seasoning mix using either ground or whole spices.

 Ingredients:

  • 1 tsp. ground Szechuan pepper
  • 1 tsp. ground star anise
  • 1-1/4 tsp. ground fennel seeds
  • 1/2 tsp. ground cloves
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. ground white pepper

Preparation:

Combine all ingredients in small airtight container. Store in a cool, dry place.  If using whole spices, use a blender to grind until powdery and of course, it’s definitely fresher and aromatic than the already grounded spices.

Cooking is about Aga-aga.  If you short of 1 spice, then let it becomes 4 spice seasoning mix.

How to ‘gain’ many years younger than your age?

 Foods that keep you young

Olive Oil:
Contains polyphenol, powerful antioxidants that help prevent age-related diseases.  The monosaturated fats in olive oil were largely responsible for the low rates of heart disease and cancer.

Yoghurt:
Yoghurt is rich in calcium which helps stave off osteoporosis and contain ‘good bacteria’ that help maintain gut health and diminish the incidence of age-related intestinal illness.  Eat Yoghurt for long lives. 增加多几个十年!

 Fish: (eat extra-ordinary amount)
Is abundance with Omega-3 fats which helps prevent cholestrol build-up in arteries and protect against abnormal heart rhythm.

Chocolate:
Drink beverage made with generous proportion of coca, which is unusually rich in flavanols that help preserve the healthy function of  blood vessels.  Maintaining youthful blood vessels lower risk of high blood pressure, type 2 diabets, kidney diseas and dementia.

Nuts:
Nuts are rich sources of unsaturated fats, so they offer benefits similar to those associated with olive oil.  Nuts also have concentrated sources of vitamins, minerals and other phytochemicals, includingantioxidants.  Eating nuts, on average, extend your lifespan by  extra 2.5 .

Blueberries:
Compound in blueberries (and other berries) mitigate inflamation and oxidate damage, which are associated with age-related deficits in memory and motor function.

Go Bananas!

After reading this, you’ll never ‘look down’ at  banana and up up up is the cost of banana.

Banana, a natural remedy for many illness – high in fiber, high in vitamin B, high in natural sugars, high in iron, high in potassium. Definitely, a must to add to our daily diet.  When compare a banana to an apple, it has four times the protein, twice the carbohydrate, three times the phosphorus, five times the vitamin A and iron, and twice the other vitamins and minerals.

Wah lah, my favourite durian is not in the chart.  Anyone knows wat’s so good about durian? 
Tell you a joke.  When I had my girl, I was craving for durians. One day, my 2nd son who was 5 then, came to my room and asked:
“Mommy, is it because you eat durians and it causes you to have baby?”  ?????

Simple Low Cost & Delicious Crispy Fried Bean Curd

CRISPY  FRIED  BEAN CURD

 2     pcs       firm bean curd  cut into squares
1/2  cup     corn    flour
1/2  cup     sweet potato flour
2     cups     oil  for  deep – fry

Dipping Sauce:
2  tbsp     light  soy  sauce
1  tsp       sugar 
2  tsp       sesame oil
1  no.       red  chilly  chopped
2 cloves  garlic  chopped
coriander  leaves chopped
( mix well with seasoning  &  set aside )

Method:
1. Mix both flour together, put bean curd & coat evenly

2. Deep fry bean curd until golden brown

3. Remove, drain & serve with dipping sauce.

4. Needless to say, serve hot.

So, if you have a party.  Pre-prepare the dipping sauce and keep aside.  You can deep-fry the bean curd just before guests arrive and keep it  warm  in oven at around 80 deg C.

Black Beans:
Black beans boost brain power because they’re full of anthocyanins, which are antioxidants that improve brain function. One 1/2-cup daily serving provides 8 grams of protein and 7 1/2 grams of fiber. Beans in general are low-calorie and free of artery-clogging, heart-disease- promoting saturated fat.

Blueberries:

Walnuts:
Walnuts are richer in heart-healthy omega-3 fatty acids than salmon. They’re also loaded with more anti-inflammatory phytochemicals (polyphenols) than red wine and contain half as much muscle-building protein as chicken. Consume daily about seven nuts, to enjoy the benefits of walnuts.

Oats for Better Abs:
Oats contain soluble fiber, which protects against heart disease by making your arteries suppler and lowering your blood cholesterol level. Oats are complex carbs, which means that through their protein content (10 grams of protein per serving), they slow down the release of sugar to the blood stream, making it possible for you to use the fuel as energy and to build muscle. How to make your own Cake Flour?

Ladies and Gentlemen who love baking and when you suddenly run out of cake flour, you can turn your all purpose flour (also called plain flour)  into cake flour, use:

Ingredients:

2 cups minus 2 tbsp flour

2 tsp baking powder

2 tbsp cornstarch

 

Method:
Sift together. 

Voila!   You already made your own great cake flour.

Braised Beef

Braised Beef

Ingredients:
1 kg Beef chunk or shin
1 thumbsized smashed old ginger for the boiling water
1 stalk spring onion
1 tbsp Chinese Yellow Rice, homemade is better
5 tbsp Vegetable Oil
6 sliced Old Ginger
12 gloves garlic, peeled and smashed
2 to 3 tsp fu yee or salted soya beans (optional for cancer patients)
2 nos whole star anise
1 x 5cm cinnmon stick
2 ea tbsp of dark and light soya sauce
1 stick of caned sugar or 80gm rock sugar
1 dried tangerine peel
1 stalk spring onion, chopped
1/4 tsp sesame oil

1 tsp cornflour mixed with 1 tbsp water, mixed well. 

 Method:

1) Add spring onion, ginger, yellow wine and beef into a pot of boiling water for 5 mins. Drain & cut the beef into big chunks of abt 3cm2.

2) Stir-fry garlic and ginger in hot vegetable oil till fragrant.  Add beef cubes, stir-fry till browned. Add mashed soyabeans, star anise and cinnamon stick, ginger slices.  Stir fry for 2 mins, add 4 cups water, dark soya sauce, light soya sauce, sugar and tangerine peel.

3) Bring to boil and then lower heat to braise beef for 1.5hrs or more till tender.  Gravy should be thickened by now.

4) Add spring onion, sesame oil and salt to taste.

5) Take out all the condiments, if you mind.

6) If you wish to have thicker sauce, add cornflour paste but I DON’T.

7) SERVE THE DISH HOT, PLEASE.

Homemade Ginger Teriyaki Sauce

Homemade Ginger Teriyaki Sauce

What for:  To marinade meat/seafood overnight, then bake/grill/panfry

Ingredients:
1.5 cups pineapple juice
1  tbsp ginger juice
1/2 tsp garlic paste
3/4 cup soy sauce
3/4 cup brown sugar
1/4 tsp white pepper — ground

Method:
Combine all ingredients.
